Pineapple rice

1 1/2 c brown rice
3 c water
1 fresh pineapple
1 red bell pepper
1 red onion
1 T sesame oil
1 T olive oil
1 T honey
Juice of 1 lime
1/8 dried red pepper flakes

Cook rice and set aside. Preheat oven to 400. Whisk together oil, honey, pepper flakes, and lime juice. Add cubed pineapple, cubed bell pepper, and sliced onion. Toss to coat. Spread on a baking sheet and roast for 30 min. Serve over rice.

  2. I made this and it was good! I put the leftover pineapple mixture on a gluten free pizza. I used regular pizza sauce but would use bbq sauce next time. It was good!
