Cuban Style Roasted Sweet Potatoes

3 large sweet potatoes, cut into bite size pieces
4 Tablespoons olive oil
Sea salt to taste
Ground pepper to taste
1 large garlic clove, minced
1 tablespoon fresh lime juice
1.5 tablespoons chopped fresh parsley

Heat oven to 400 degrees. I toss all ingredients together and roast the potoates in the oven for about 30 minutes.
